Ever seen a trailer for a cook book before? Neither have I but if I could create plates that looked this way I guess I’d make a fuss about it too.

Yellow Tomato Soup with Thai Basil & Bacon

      

Don’t get me wrong I love the summer as much as the next person. Any season that has continuously good weather and pretty much turns everyone into a booze hound can’t be that bad. But because I’m human and we all want what we don’t have, once the last few weeks of August roll around I start looking forward to the fall. To all the pumpkin beer, and butternut squash soup, and long sleeves, and new TV. Fall is host to my absolute favorite holidays Halloween & Thanksgiving. (Anyone who thinks Christmas is better than either of these is just plain wrong, sorry.) And of course it is also the season in which I get older and as the years go by weirder.

So I spent the last day of August in one of these “I wish it were fall already” moods and decided even though it was damn near 90 degrees out I wanted soup for dinner, and a pumpkin beer to go along with that soup even though it wasn’t even September yet. Maaaaaan did it make me happy. And just before you think I’m totally crazy I used yellow tomatoes which is 100% a summery ingredient so that’s gotta count for something.

YOU WILL NEED:

  • 4 TBS unsalted butter
  • 1 white onion thinly sliced
  • 2 TSP ground coriander
  • 3 garlic cloves minced
  • 3 LBS yellow tomatoes
  • 2 cups chicken or vegetable stock
  • 1 1/4 tsp kosher salt plus more to taste
  • freshly ground black pepper to taste
  • 3 or 4 sliced of bacon
  • 3 TBS chopped Thai basil
  • 1/2 cup heavy cream

In a large bot melt butter over medium heat and saute onions for about 5 minutes until they are transluscent.

Add garlic and ground coriander and saute for a couple more minutes till everything is coated.

Stir in tomatoes, stock, Thai basil, salt and pepper. Bring to a boil and then reduce heat to low and let pot simmer for 30 minutes. While pot is simmering fry up the slices of bacon. 

After 30 minutes the tomatoes should be soft and falling apart. Blend the soup till completely smooth and pour back into the pot on medium heat. Add the heavy cream and stir till soup and cream are mixed throughly.

Crumble bacon on top and eat with lots of bread butter and beer.
